Nonya Vegetable Recipes - Nonya Rojak or Exotic Singapore Salad

Nonya Vegetable Recipes - Rojak or Exotic Singapore Salad - also called Fruit Rojak, is a fruit and vegetable salad
tossed in a special sauce. Simply labeled Rojak Sauce, the sauce is made from a thick black molasses-like paste called haeko,
pronounced 'hey-ko' or Prawn Paste [Otak Udang, in Malay]. This is combined with palm sugar, tamarind paste and other
ingredients. Pineapple, apple, guava, green mango, jicama and cucumber are tossed in this sauce with crushed peanuts and
sesame seeds. Thai Bird chilies are added to give this exotic salad a fiery kick!
Rojak or mixed Vegetables Salad Ingredients
1 cucumber
2 small green mangoes, skinned
1 medium pineapple
300gm turnip
3 teaspoons of black shrimp paste
150gm peanut candy or roasted peanuts, grounded coarsely
1 tablespoon of roasted sesame seeds
Rojak or mixed Vegetables Salad Sauce:
25 dried chillies, soaked and ground
2½ cm square dried shrimp paste, toasted and ground
4 tablespoons assam or tamarind paste mixed with ½ cup water and strained
5 tablespoons sugar
1 teaspoon of dark soy sauce
Rojak or mixed Vegetables Salad Method Step by Step:
1. Put ground ingredients ( dried chillies and toasted dried shrimp paste
) and assam water or tamarind juice in a small saucepan and cook over low heat.
Stir in sugar and dark soy sauce and cook until sugar dissolves ans sauce is
thick. et it cool.
2. Cut cucumber, mangoes,pineapple and turnip, in small wedges, into a
large mixing bowl. Put in cooled rojak sauce and black shrimp paste and mix
well.
3. Add ground peanut candy and roasted sesame seed. Stir well and serve
immediately.
