Nonya Poultry Recipes - Satay Ayam or Chicken Satay

Nonya Meat Recipes - Satay Ayam or Chicken Satay
Satay Ayam or Chicken Satay Ingredients
500gm
chicken meat
Grind the following Ingredients together:
10 small onions or shallots
5 cloves of garlic
1 to 1½teaspoon white peppercorns
2 teaspoons anise (Jintan Manis)
2 teaspoons cumin (Jintan Puth)
50 satay sticks or (coconut palm sticks) soaked in water
1 tablespoon coriander seeds (kentumbar)
1 small piece shrimp paste (blanchan)
2 inch long lankuas
A teaspoon tumeric (kunyit)
4 tablespoons sugar or brown sugar
Satay Ayam or Chicken Satay Peanut Sauce Ingredients:
5 tablespoons of cooking oil
12 small onions or shallots
6 cloves garlic
10 dried chillies,seeded
1 piece belachan (dry shrimp paste)
5 buah keras (or cashewnut)
2 stalks serai (lemon grass) sliced
2 cups thick coconut milk
1 piece assam (tamarind) mixed with water and strained
180gm roasted peanuts ground coarsely
1½ teaspoon salt
sugar to taste
Accompaniment with Satay Ayam or Chicken Satay:
Cucumber, big onion, pineapples, satay peanut sauce and ketupat or rice
Satay Ayam or Chicken Satay Method Step by Step:
1. Slice the meat into thin slices.
2. Marinate the meat in the grounded ingredients for about 30 minutes.
3. Cut the lidi sticks or skewers into about 7-8 inch long sticks with 1
end sharpened. Thread about 3-4 slices of meat from the sharp end of the stick
and grill on charcoal until cooked. Sprinkle with mixture of oil and water
during the process of roasting. Turn over the other sides and roast till the
meat is cooked. Serve with satay sauce.
Satay Ayam or Chicken Satay Peanut Sauce Step by Step:
4. Grind the red chillies, garlic, small onions, buah keras, serai and
the belachan to a paste.
5. Roast the peanuts and ground coasely..
6. Add about 1cups of water to the assam or tamarind and mix well. Strain and
discard the seeds. Keep the water.
7. Add about 5 tablespoons of cooking oil to a kuali. When hot, add in the
ingredients (no. 4) to fry. Add in the assam water (no. 6) and the
peanuts (no. 5) and bring to boil. Add in the coconut milk, sugar and
salt. Simmer for minutes and taste for seasoning. Serve the satay with satay
sauce, cucumber, big onion, pineapples and ketupat or rice.
